Ingredients
200g flageolet beans
1 garlic clove
3 fresh tomatoes
½ medium heat chilli
1 table spoon of Organic tomato Puree
½ teaspoon of smoked paprika
50ml Water
50g flat leaf parsley
Egg,
Slice of wholemeal bread for toast
Method
Take a small oven proof casserole dish with lid and place on hob add a small amount of olive oil, chopped garlic, chilli, paprika the tomatoes and bring to boil. Boil for 3 minutes then add beans the extra water and place in a pre heated oven @180c for 25 minutes or until the consistency in not watery.
To serve
Place toast on plate beans on top egg on to of the beans and generously sprinkle with chopped parsley and black pepper.
